Breakfast again...

Breakfast today is a bed of spinach with goat cheese, sautéd potato, onion, and baby bella mushrooms, with olive oil and a fried egg on top.

Lunch!

My new favorite!

Inspired by the Indian food I ordered last night, I decided to make an Indian inspired breakfast this morning! The ingredients in my fridge haven't changed much from my last post, other than the fact that there are fewer than before (I've been very busy, which leaves little time to get to the store!). Luckily, I still have the Feta cheese, potatoes, onion, and eggs. This is where my seasonings come into the picture! I warm up a pan and add olive oil with curry powder, salt and pepper. I cut a small potato into small pieces after taking the skin off, and coarsely chop about 1/4 of a large onion. I add the potato and onion to the pan and set the heat to low. I add Paprika and stir the mixture in the pan. I then put left over Naan bread on the plate, with some of the Feta, an when the potatoes are soft and the onions are translucent I pour them over the Feta. I then use the same pan with some of the seasonings still in it to fry an egg, and I lay the egg over the top of the mixture. Yum! I didn't get a picture until I was about half way done eating it, but here it is! Enjoy!
