Modified Shrimp Po' boy

Cooked shrimp, dipped in egg whites, then covered in bread crumbs mixed with curry powder, then sautéd in olive oil.
In a separate pan, caramelized onions and mushrooms with hot sauce (Chalula).
Lay out bread (shepherds or french are good), and add mayo with some of the hot sauce. Then add sliced tomato and fresh spinach.
I add the shrimp when crispy, and put the onions and mushrooms on top.
