Thanksgiving Breakfast

A little late, I know, but I had to share this yummy, super easy, holiday left-over breakfast! 


I started with a frozen hash brown patty, I prefer Trader Joe's Hashbrowns.


While browning the patty in oil, chop onion and throw it into the pan as well, add butter, and a little salt.

In a bowl, combine desired Thanksgiving leftovers, omitting any potato based dishes. I used turkey (diced), stuffing, green bean casserole, and I added gravy to moisten the mix. Depending on your leftovers, adding cheese can be a nice touch. I added aged cheddar.

Once browned, remove hash browns from the pan and plate, leaving the onions to brown further. Add more butter and the bowl of leftovers to the pan, mixing with the onions.

Beat eggs (1-2 eggs per person) with milk until light and frothy. Add to mixture in pan and mix well. You can make this either a scramble or an omelette. Once cooked to preference, plate on top of the hash brown patty.

Fancy Mac & Cheese

I got off work late tonight, and didn't have much in the kitchen to work with... Mostly sandwich fixings, including different kinds of cheese and sausage. In the cupboard a box of Mac & Cheese. 
I always try to keep a few things around that will spice up most meals, and having  a few of those gourmet items to liven up otherwise bland and inexpensive meal plans can be very helpful. 
One of my comfort foods is Mac & Cheese. When I was young, and my mom was for some reason not able to make dinner for the night, my dad would always pull out a box of it, and it was SO good! He would make it with real butter and cut up hotdogs to mix in.
Tonight's late night dinner consisted of:
A box of Mac & Cheese
Chicken & Apple sausage 
Braided & marinated mozzarella (but any mozzarella will do)
Parmesan cheese
White Truffle oil
Butter

Cut up sausage and throw in a frying pan  with a little bit of the truffle oil until brown
Boil macaroni 
Melt butter in the microwave, add cheese mix and milk, and a little bit of mozzarella and Parmesan, with a bit more truffle oil. -Mix briskly with a fork
Drain macaroni, add back to pot, mix all ingredients together

Voila! Extra cheesy, indulgent, Mac & Cheese that tastes oh-so gourmet!
