Pantry:
-Small Russet Potatoes
-Dry Pasta
-Can of Artichoke Hearts
-Can of Hearts of Palm
-Jar of Alfredo Sauce
Ok, so here goes!
I choose to use onion, spinach, olives, Feta, potato, tomato, alvocado, and an egg.
I coarsely chop a small amount of onion, and throw it in a hot pan with a bit of olive oil and salt. Then, I add one of the potatoes, coarsely chopped and peeled. I cook both over low heat for awhile, bringing it up to medium when the onions are becoming translucent. I then slice about 1 quarter of the alvocado and lay it down on my serving plate. At about this time I add the fresh spinach to my pan of onions and potato.
I chop up 3 Kalamata olives, 2 slices of tomato, and a couple large hunks of feta cheese, and put them on the plate with the alvocado.
When the onions are browned, and the potatoes are soft, I poor the mixture from the pan on top of my pile on the plate.
Then, I break an egg into the pan and fry it. The egg goes on top of my pile on the plate, and voila! Breakfast!
My Favorite Part!
Not too bad, but I will say that if you are not a fan of salt, omit the olives. And you can really use any type of cheese, I just prefer Feta. Enjoy!
